Christmas Comfort Foods

Hey, everybody! Are you all staying warm? I'm wearing two sweaters today!! I am just not a cold weather person! It does make me realize that Christmas is just around the corner! (17 days to be exact!). It's about that time for me to pull out tried and true recipes that my boys enjoy each Christmas. We do the traditional sausage and cheese balls, Christmas casserole for Christmas morning, and of course, cookies! We make lots of those! And even though we give away tons, we manage to eat almost as many.

I have a recipe that I wanted to share with y'all today. It's a chocolate chip cake that everybody goes bananas over! I make it for birthdays, surprises, and for Christmas. Everybody loves it except...me! I have a confession to make that only a few of you are aware of. I don't eat dark chocolate. Never have, never will. I simply don't like it! The smell sends me over the edge--especially when I was pregnant! So, if Mama makes one, it's for somebody she really loves!

My darlin' friend, Donita, shared this recipe with us years ago. So now, I share it with y'all.


Donita's Inside-Out Chocolate Bundt Cake

-1 pkg( 4-1/2 oz) Jello instant chocolate pudding

-1 pkg ( 2 layer size) Devil's Food cake mix ( with or w/o pudding)

-1 pkg chocolate chips ( I use milk chocolate and only 1/2 the bag)

-1 and 3/4 cup of milk

-2 eggs



Combine all ingredients except chips until well-blended (about 2 minutes). Stir in the chips. Pour into a greased and floured ( I use Baker's Joy!) 12 cup tube or bundt pan. Bake at 350 for 5-55 minutes or until cake springs back when lightly touched. Do not overbake. Cool 15 minutes in the pan. (Do not tap cake on the counter before baking--causes chips to sink.)

I wanted to be able to have Mr. Linky here to make sharing your recipes easier, but, mercy, I have no idea how to do it! I can't even find it! I can't help with the Mr. Linky thing ... but I WILL share a yummy, simple family favorite that's pretty & festive - perfect for a holiday side!

PINK CRANBERRY SALAD

8 oz. Cream Cheese
2 Tablespoons mayonnaise
1 cup whole cranberry sauce
8 ounces crushed pineapple, drained
1 teaspoon Vanilla
2 Tablespoons Sugar

Soften cream cheese. With a mixer blend in vanilla, mayo and sugar until smooth.

Fold in the cranberry sauce and pineapple, then pour
into mold or dish. Chill overnight.

Yummm! That cake sounds delicious! Girl, are you sure you're okay? Not liking chocolate??? Oh, my! lol

Mmmm! I love chocolate things. I do have a recipe on my blog. Not for the kids :) Well, I mean, you could modify it, but since the Irish whiskey doesn't bake off or anything, I try and not make it when I know kids will eat them.

We also do the sausage & Cheese balls, the breakfast casserole and cookies. Plus lots of fudge and Monkey Bread for Christmas morning.

I have a good cheese ball recipe I'll share with you. It's great for parties or enjoying with the family on Christmas Eve. The recipe makes good sized balls. We eat it with Wheat Thins or Triscuits.

Cheese Ball (makes 2)

3- 8 oz. packages of cream cheese softened
8 oz. grated medium cheddar cheese
8 oz. ham, (sandwich ham finely chopped)
6 green onions finely chopped
6 oz. chopped jalapenos (I buy a jar by Mt. Olive that is 12 oz. and use half)
1 cup finely chopped pecans

Mix everything but the pecans together well and form two balls. Roll the balls in the chopped pecans. Refrigerate at least 3 hours, then enjoy with crackers. I know this has jalapenos in it, but it is not especially hot because there are no pepper seeds in it. Just has a nice little kick to it.

This year I had recipe cards printed at Sams for our Christmas cards. They even have our family picture on it. Here is the recipe that I included on our cards.

T'was the night before Christmas omelet

8 eggs
1 1/2 cups milk
2 teaspoons all purpose dill mix
5 slices white bread
2.5 oz pkg. ham (coarsely chopped)
1/2 cup onion(coarsely chopped ) 7 mushrooms (sliced)
1/2 teaspoon ground black pepper Dash of salt
1 1/2 cups shredded mozzarella cheese

Beat eggs, milk and dill mix in a bowl with a whisk. Tear bread into small pieces. Add bread, ham, onion, mushrooms, pepper and salt to egg mixture. Stir. Pour into deep dish baker. Sprinkle with cheese. Bake for 35-40 minutes at 400 degrees. 8 -10 servings. (Variation: prepare omelet, cover and refrigerate overnight. Bake for 40-45 minutes the next morning.)

I have never done Mr. Linky, or I would help! this cake sounds yummy. can't go wrong with chocolate.

here's a quick easy treat that all my friends go crazy over:

2pckges.white chocolate chips
one bag of mini pretzel twists
one bag of holiday m&ms.

put the pretzels in a large bowl.
melt chocolate in microwave.
pour chocolate over pretzels and stir.
when pretzels are coated and chocolate is cool but still soft, add the bag of m&ms. Stir.

spread pretzels on waxed paper until the chocolate hardens. break in pieces and enjoy!

my friends just love these, and they are sooo easy!

i can't keep warm today to save my life, it's dark all the time so i can't run outside.i'm so glad i can try to bake this cake and take my mind off all of it :) i miss my hot, hot summers :)

My family would say that the Peanut Brittle I make is a comfort food. I have yet to make the FIRST BATCH for anyone this year. I am going to be in BIG trouble.

btw - my MMTR ornament looks so pretty on the tree :)

Thank you for hopping over to remind me about giving you a recipe...I had completely forgotten!

A cookie recipe, huh? Well, since you don't care for chocolate *gasp*, I'll give you one of my recipes for cookies with NO chocolate:

Snickerdoodles
1 c. butter or marg.
1 1/2 c. sugar
2 eggs
2 3/4 c. flour
2 tsp. cream of tartar
1 tsp. baking soda
1/4 tsp. salt

Cream together butter and sugar until light and fluffy. Mix in eggs.

Sift dry ingredients together. Gradually mix dry ingredients into creamed mixture.

Mix in a small bowl:
2 Tablespoons sugar
2 Tablespoons cinnamon

Roll dough into a ball, about the size of a walnut. Roll in cinnamon/sugar mixture. Bake at 400 degrees for 8-10 minutes. (We like these cookies soft and chewy, so I bake for 8 min.)

Place foil on a cooling rack. Put cookies on the foil to cool.

Enjoy!

I'm known in these parts (my house) for my apple crisp. But recently, I've changed my legacy.
